Oatmeal Raisin Cookies

3/4 cup butter
1 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 Tblps molasses
2 cups flour
1 1/2 cup oats
1 cup raisins

Preheat oven to 350 degrees.  Cream butter, sugar, brown sugar together.  Add egg, vanilla, and molasses.  Slowly add dry ingredients.  Add raisins last.  Drop by spoonfuls onto greased cookie sheet.  Bake @ 350 for 8 minutes.

Peanut Butter Cookies

1/2 cup butter
1 1/2 cups peanut butter
1 cup sugar
2/3 cup brown sugar
2 eggs
2 1/2 cups flour
1 1/2 tsp baking soda
1 tsp salt

Preheat oven to 350F.  Cream sugar, brown sugar, shortening, peanut butter and butter together on medium speed. Mix in eggs. Reduce speed to low and gradually mix in flour mixture.
Shape the dough into 1” balls (about 6 dozen). Press gently with fork.  Bake on an ungreased cookie sheet for 8 minutes.

Snickerdoodles

1 cup butter
1 1/2 cups sugar
2 eggs
1/2 tsp salt
2 tsp baking powder
1/2 tsp cream of tartar
cinnamon/sugar mixture
 
Preheat oven to 350F. Sift together flour, baking powder, and salt.  Beat sugar, cream of tartar and butter together on medium speed until pale and fluffy. Mix in eggs. Reduce speed to low and gradually mix in flour mixture.
Shape the dough into 1” balls (about 4 dozen). Roll in cinnamon/sugar mixture.  Bake on greased cookie sheet for 8 minutes.

Oatmeal Scotchies

1 cup butter
1 1/2 cups brown sugar
2 eggs
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 cups flour
1 1/2 cup oats
1 pkg butterscotch chips

Preheat oven to 350F.  Cream brown sugar and butter together on medium speed.  Mix in eggs and water.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Maple Brown Sugar Oatmeal Cookies

1 cup butter
1/3 cup sugar
1 cup brown sugar
2 eggs
2 tsp maple extract
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1 1/2 cups flour
3 cups oats
                                                                                                                                               
Preheat oven to 350F.  Cream brown sugar, sugar and butter together on medium speed.  Mix in eggs and maple.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Key Lime Cookies

1 cup butter
1 1/2 cups white sugar
1 egg
1/2 tsp vanilla extract
3 Tblsp lime zest
4 Tblsp fresh squeezed lime juice
2-3 drops green food coloring
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1/4 tsp cream of tartar
2 3/4 cups all-purpose flour
1/2 cup sugar for rolling cookies


Directions:
 
Preheat oven to 350 degrees. Cream together butter and sugar until smooth and very fluffy. Beat in egg, vanilla extract, food coloring, lime juice and lime zest. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on greased cookie sheets about 1 1/2 inches apart. Bake 8 minutes until lightly browned. Let stand on cookie sheet two minutes before removing to cool on wire racks.
