Hawaiian Cookies

1 cup butter
1/2 cup brown sugar
1/2 cup white sugar
2 eggs
1/2 tsp vanilla extract
1/2 tsp banana extract
1 tsp baking soda
1 tsp salt
1/2 cup dried bananas
1/2 cup dried pineapple
1 cup coconut flakes

Finely chop dried bananas and dried pineapple in a food processor.  Cream together butter and sugars.  Add egg, vanilla and banana extracts.  Add dry ingredients, coconut and chopped, dried fruit.  Bake on ungreased cookie sheet @ 350 degrees for 8 minutes.

Chocolate Covered Pretzel Cookies

1/2 cup butter
1/4 cup brown sugar
1/2 cup sugar
1 egg
1/4 cup oats
3/4 cup flour
1/2 tsp baking soda
1 tsp salt
1/2 tsp vanilla
1 tsp baking powder
1 cup crushed pretzels
1/4 cup caramel bits
1/4 cup mini chocolate chips

                                                                                                               
Preheat oven to 350F.  Cream brown sugar, sugar and butter together on medium speed.  Mix in egg and vanilla.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Nutella Chocolate Chip Cookies

1/2 cup butter
1/2 cup sugar
1/2 cup + 2 Tblsp brown sugar
2 eggs
1/4 cup Nutella
2 cups flour
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla
1 pkg mini chocolate chips

Preheat oven to 350F.  Cream brown sugar, sugar, nutella and butter together on medium speed.  Mix in eggs and vanilla.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Cinnamon Roll Cookies

This cookie is a two-parter. . .

I will post both recipes with photos of how to roll them.

Vanilla Dough:

1 cup butter
1 1/2 cups powdered sugar
1 egg
1 1/2 tsp vanilla
1 1/2 tsp butter flavoring
2 tsp baking powder
1 tsp salt
2 1/2 cups flour

Cream together butter and sugar.  Add egg.  Add dry ingredients and mix well.  Roll out onto floured board to 1/4" thickness.

Cinnamon Dough:

3/4 cup butter
1 1/2 cups brown sugar
2 eggs
2 tsp vanilla
1 tsp baking powder
1/2 tsp salt
3 cups flour
1 Tblsp cinnamon

Cream together butter and brown sugar.  Add egg.  Add dry ingredients and mix well.  Roll out onto floured board to 1/4" thickness.

lay rolled out cinnamon dough onto rolled out vanilla dough.  Cut edges so they are the same size.

Gently roll the dough into a tube, like you would roll fresh cinnamon rolls.


 

 
Cut with sharp knife into 1/4" slices.
 
Place on parchment paper lined baking sheet.
 
 
Bake @ 350 for 8 minutes.
 
 
Cool and serve!

Oatmeal Raisin Cookies

3/4 cup butter
1 cup packed brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 Tblps molasses
2 cups flour
1 1/2 cup oats
1 cup raisins

Preheat oven to 350 degrees.  Cream butter, sugar, brown sugar together.  Add egg, vanilla, and molasses.  Slowly add dry ingredients.  Add raisins last.  Drop by spoonfuls onto greased cookie sheet.  Bake @ 350 for 8 minutes.

Peanut Butter Cookies

1/2 cup butter
1 1/2 cups peanut butter
1 cup sugar
2/3 cup brown sugar
2 eggs
2 1/2 cups flour
1 1/2 tsp baking soda
1 tsp salt

Preheat oven to 350F.  Cream sugar, brown sugar, shortening, peanut butter and butter together on medium speed. Mix in eggs. Reduce speed to low and gradually mix in flour mixture.
Shape the dough into 1” balls (about 6 dozen). Press gently with fork.  Bake on an ungreased cookie sheet for 8 minutes.

Snickerdoodles

1 cup butter
1 1/2 cups sugar
2 eggs
1/2 tsp salt
2 tsp baking powder
1/2 tsp cream of tartar
cinnamon/sugar mixture
 
Preheat oven to 350F. Sift together flour, baking powder, and salt.  Beat sugar, cream of tartar and butter together on medium speed until pale and fluffy. Mix in eggs. Reduce speed to low and gradually mix in flour mixture.
Shape the dough into 1” balls (about 4 dozen). Roll in cinnamon/sugar mixture.  Bake on greased cookie sheet for 8 minutes.

1 cup butter

2 tsp baking powder

Preheat oven to 350F.  Cream brown sugar and butter together on medium speed.  Mix in eggs and water.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Maple Brown Sugar Oatmeal Cookies

1 cup butter
1/3 cup sugar
1 cup brown sugar
2 eggs
2 tsp maple extract
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1 1/2 cups flour

Key Lime Cookies

1 cup butter
1 1/2 cups white sugar
1 egg
1/2 tsp vanilla extract
3 Tblsp lime zest
4 Tblsp fresh squeezed lime juice
2-3 drops green food coloring
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1/4 tsp cream of tartar
2 3/4 cups all-purpose flour
1/2 cup sugar for rolling cookies


Directions:
 
Preheat oven to 350 degrees. Cream together butter and sugar until smooth and very fluffy. Beat in egg, vanilla extract, food coloring, lime juice and lime zest. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on greased cookie sheets about 1 1/2 inches apart. Bake 8 minutes until lightly browned. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Munchkin Bites

1 cup butter
3/4 cup sugar
3/4 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 1/4 cups flour
1 package mini semi-sweet chocolate chips

Cream together butter and sugars. Add eggs and vanilla. Beat until fluffy. Gradually add dry ingredients and chocolate chips. Drop by spoonfuls onto u greased cookie sheet. Bake @ 350 for 8 minutes.

1 T molasses
2 cups flour

Cream together butter and sugar.  Add eggs, vanilla and molasses.  Cream until fluffy.  Gradually add dry ingredients.  Drop by spoonfuls onto ungreased cookie sheet.  Bake @ 350 for 8 minutes.

Pecan Sandie Thumbprint Cookies with Cream Cheese Frosting


1 cup butter                                      
1 cup vegetable oil                        
1 cup sugar
1 tsp vanilla                                       
1 cup powdered sugar                  
1 tsp cream of tartar      
2 eggs                                                 
1 tsp baking soda
1 tsp salt
2 cups chopped pecans
4  cups flour
                                                                                                          
Preheat oven to 400F.  Cream powdered sugar, sugar, oil and butter together on medium speed.  Mix in eggs and vanilla.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Gently press a thumbprint in center of each cookie.  Bake 8 min.  Cool completely and add frosting to center 3-6 hours before serving.
 

Frosting:
 
1 cup butter
2 (8 oz) packages of cream cheese
2 lbs powdered sugar
1-2 Tblsp heavy cream
 
Cream butter and cream cheese together until light and fluffy.  Slowly add in powdered sugar and cream to desired consistency.  Add decorator coloring and pipe onto cookies with decorator bag.

Lemony Snicket Cookies

2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1/2 teaspoon vanilla extract
Zest of one large lemon, finely minced
4 tbsp fresh lemon juice
1/2 cup sugar for rolling cookies

Directions:

 Preheat oven to 350 degrees. Preheat oven to 350F.  Cream sugar and butter together on medium speed.  Mix in eggs and vanilla.  Reduce speed to low and gradually mix in dry ingredients and Andes mint pieces.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Nutella Cookies


1/2 cup butter (1 stick)                 
2 cups all-purpose flour
1/2 cup sugar                                    
1 teaspoon baking soda
1/2 cup + 2 tbsp brown sugar     
1/4 teaspoon salt
2 eggs                                                  
1 teaspoon vanilla           
1/4 cup + 1 tbsp Nutella                               
 
Preheat oven to 350F.  Cream brown sugar, sugar, nutella and butter together on medium speed.  Mix in eggs and vanilla.  Reduce speed to low and gradually mix in dry ingredients.  Drop on an ungreased cookie sheet by spoonful.  Bake for 8 minutes.

Brown Sugar Cookies


3/4 cup butter
1 1/4 cups brown sugar
1 egg
1 tsp vanilla extract
2 cups flour
2 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger


Cream together softened butter and brown sugar.  Add egg and vanilla.  Gradually add dry ingredients mix completely.  Drop by spoonfuls onto greased cookie sheet.  Bake @ 350 degrees for 8 minutes.  Makes approximately 3 dozen cookies.

Strawberry Chocolate Chip Cookies


1 (18 1/4 ounce) package strawberry cake mix
1/3 cup vegetable oil
2 eggs
1/4 cup water
1 cup mini semisweet chocolate chips

Combine the cake mix, vegetable oil, eggs, and water in a large mixing bowl.  Mix well.  Fold in the chocolate chips.  Drop by spoonful onto a greased cookie sheet.  Bake at 350 for 10 minutes.

Coconut Macaroons (Gluten Free!!!)

4 cups sweetened flaked coconut
3/4 cup sugar
4 egg whites
1/4 tsp salt
1 tsp vanilla extract
1/8 tsp almond extract

Preheat oven to 325 degrees.  Line cookie sheets with parchment paper.  In large bowl, stir all ingredients together until well combined.  Drop from cookie scoop, or rounded teaspoon 1 inch apart onto prepared cookie sheet.  Bake until set and lightly golden for 25 minutes.  Cool cookies for 1 minute and transfer to cookie rack to cool completely.

Pantry Surpise Cookies

½ cup butter                                     ¾ cups flour
¼ cup brown sugar                          ½ tsp baking soda
½ cup sugar                                       1 tsp salt
1 egg                                                   ½ tsp vanilla

1 cup crushed pretzels                   1 cup crushed corn chips
¼ cup white chocolate chips         ¼ cup peanut butter chips

Molasses Sugar Cookies

              ¾ cup butter                      2 cups flour
              1 cup sugar                        ½ tsp ground cloves
              ¼ cup molasses               ½ tsp ground ginger

              1 egg                                      1 tsp cinnamon             
              2 tsp baking soda            ½ tsp salt

 
 
Preheat oven to 375F.  Cream sugar and butter together on medium speed.  Mix in eggs and molasses.  Reduce speed to low and gradually mix in dry ingredients.  Chill in refrigerator for at least 3 hours.  Form 1” balls and roll in granulated sugar.  Place on greased cookie sheet.  Bake for 8 minutes.
